Day 6, Wednesday: Cooking demonstration, field trip to Beaune and Hôtel-Dieu, tasting at  Domaine Olivier Leflaive

While Libellule proceeds upstream to Chalon-sur-Sâone, Mo demonstrates his preparation of pears poached in red wine.

The afternoon begins with a visit to the medieval fortified city of Beaune.

Beaune’s most famous landmark is the Hôtel-Dieu, the original hospital building of the Hospices de Beaune, a foundation established by the chancellor of Burgundy in 1443 to provide care for the poor. Over the centuries the foundation has received donations of some of the region’s finest vineyards, whose wines are sold at a world-famous annual auction.

The day’s dégustation introduces us to the wines of Puligny-Môntrachet at Domaine Olivier Leflaive. The five white wines are all of the same year (2006) but different terroirs.
